Date balls
We love these date balls, and over time we’ve made so many variations that I’ve lost count. The recipe works with cashews, peanuts, almonds—or really just about any nut you can think of. Around here, we usually make them with cashews and peanut butter. Sometimes I add a teaspoon of chia seeds and an extra spoonful of nut butter to keep the date dough silky and easy to roll.
Ingredients
100 g cashews
150 g pitted dates
2–3 tbsp nut butter
Optional: shredded coconut or finely chopped nuts for rolling
Method
If your dates are a bit firm, run them through a garlic press to soften them.
Blend the nuts into a fine flour.
Knead together the nut flour, dates, and nut butter until it forms a dough.
Roll into bite-sized balls. If you like, coat them in coconut or nut sprinkles.
These are perfect for little hands to help with—Mathilde loves pressing the dates through the garlic press and rolling the balls. And since all the ingredients are tasty on their own, sneaking a bite or two during the process is half the fun.
